Unfiltered wines ferment longer than filtered wines. This extra fermentation time allows for sediment and yeast to settle at the bottom of the barrel. The wine is siphoned after this time has passed, and clear wine is separated from the cloudy wine that lingers in the barrel. Siphoning results in a wine with a deeper flavor.
